Chocolate & Raspberry Cake
To my palate, nothing pairs as well with chocolate as raspberries. In this recipe, bittersweet meets cocoa powder. Mormor used to make a version of this cake, but she crushed the berries, whereas I leave them whole because I love the way whole berries sink slightly into the cake while it bakes, creating pockets of intense flavor.
Serves 8 to 10
16 tablespoons (2 sticks) butter, at room temperature, plus more for the pan
1⅓ packed cups light brown sugar
3 large eggs, at room temperature
2 cups unbleached all-purpose flour
1 teaspoon baking powder
⅓ cup unsweetened cocoa powder
½ teaspoon salt
1 cup sour cream
9 ounces bittersweet chocolate, melted
1½ cups fresh raspberries
