1 daikon, about 375 g (12 oz), peeled, ends trimmed and halved widthways

1 tablespoon groundnut oil

200 g (7 oz) raw peeled tiger prawns

For the pesto

1 lemon grass stalk, tough outer layers removed and roughly chopped

1 small red chilli, deseeded and roughly chopped

finely grated rind and juice of 1 unwaxed lime

25 g (1 oz) fresh coriander

12 basil leaves

2.5 cm (1 inch) piece fresh root ginger, peeled and chopped

1 garlic clove

25 g (1 oz) gluten-free dry-roasted peanuts

2 tablespoons groundnut oil

1 teaspoon gluten-free Thai fish sauce
