Dressing:

¼ cup apple cider

¼ cup canola oil

3 tbsp cider vinegar

1 tsp Dijon mustard

1 garlic clove (peeled, minced)

French baguette (sliced, to serve)

Directions:

1. Arrange the apples on an ungreased cookie sheet and lightly brush with 2 tablespoons of maple syrup.

2. Broil the apples, 3-4” away from the heat for a few minutes.

3. Turn the apples over and brush all over with the remaining maple syrup. Broil for an additional 3-5 minutes, until crisp-tender.

4. In a salad bowl, combine the baby spinach with the Brie, pecans, and apples.

5. In a pan, combine the apple cider with the canola oil, cider vinegar, Dijon mustards, and garlic, and bring to boil.

6. Pour the dressing over the salad, tossing to coat evenly.

7. Serve with slices of French baguette.
