Variation

• Cran-Habanero Short Mead: Use 1/2 cup of freeze-dried cranberries and a quarter of a fresh habanero chili pepper.

ACERGLYN

This is a combination of two of my favorite natural sugar syrups, honey and maple syrup. The maple is most evident on the nose and complements the honey beautifully. I find that the darker, richer Grade B syrups work best in this beverage, fully expressing the maple character. I recommend bottling this a little earlier than other short meads to fully capture the sweet nature of the maple. This is a lovely beverage to drink with a weekend brunch, especially in the fall months. Yield: 1 gallon

• 15 oz. honey

• 7 oz. maple syrup

• 1 gal. chilled spring water or filtered, dechlorinated chilled tap water

• 1/16 tsp. yeast nutrient

• 1/4 package dry champagne yeast
