In a medium-size saucepan, cook the bacon if using, until crisp. Remove, leaving the bacon fat in the pan. Blot the bacon on paper towels, crumble it, and set aside.

Heat the bacon fat or other oil over medium heat. Add the celery root, chestnuts, onion, leek, apple, thyme, bay leaf, celery salt, and nutmeg; cover and cook until the onion and leeks are soft, about 7 minutes, stirring occasionally. Stir in the chicken stock, bring to a gentle boil, cover, and cook until the chestnuts are easily mashed, about 25 minutes. Discard the bay leaf and thyme.
