Duck with White Beans and Kale

On a cold day you can cuddle up with this warm, hearty stew, which takes its cues from the southwest of France. It has a generous, robust personality, and it is easy and forgiving. Give it some space. If you take your time with it—letting it heat gently, checking in every once in a while—it will become tender, and will make you feel whole again.

1 duck leg, skin on, trimmed of excess fat and skin

1 duck wing

Salt and black pepper

1 tablespoon olive oil

About ⅓ cup chopped onion

1 clove garlic, thinly sliced

½ cup white wine

1 bay leaf

1 sprig thyme

1 cup chicken stock (or duck stock)

One 15-ounce can white beans, drained and rinsed well

1 handful kale, washed and sliced (about 1 ounce)
