1 pound boneless beef stew meat, cut into 2-inch pieces

1 pound boneless lamb stew meat, cut into 2-inch pieces

1 pound boneless pork, cut into 2-inch pieces

4 carrots, peeled and thinly sliced

3 large onions, cut in half and thinly sliced

3 large leeks, white and pale green parts only, washed and thinly sliced

6 garlic cloves, peeled and crushed

Salt and freshly ground black pepper

10 fresh thyme sprigs, or 2 tablespoons dried thyme

10 parsley stems

3 bay leaves

1 bottle Alsatian white wine, such as Riesling or pinot blanc

AFTER THE MEAT HAS MARINATED, PREPARE:

3 pounds waxy potatoes, peeled and thinly sliced

2 tablespoons butter
