DREW: This may sound like a joke, but “drink the beer” is seriously one of the best things you can do to learn the nature of beer, and who knows what road it will set you on. I already had a fair love of saisons before studying for the BJCP exam, but one night, sitting quietly with a fellow student, we cracked open a bottle of Fantôme. We poured the incredibly lively and mousse-like beer into our glasses and were amazed at the “pop” the beer had on our tongues. The beer just vanished in an explosion of carbon dioxide, leaving behind these funky, fruity spice sensations. That experience is what inspired my travels to Belgium and my eventual deep dive into the world of saison. But enough about saison—here follows a beer that shows the lessons that I learned by paying attention to my flavors! (And, boy, is this a big ’un).
