Mushrooms (8 ounces, sliced))

Bell pepper (1, diced)

Sweet onion (1, diced)

Vegetable broth or water (1 cup)

Garlic powder (1 teaspoon)

Ground cumin (½ teaspoon)

Chili powder (½ teaspoon)

Ground black pepper (⅛ teaspoon, freshly)

Directions:

1. Heat a large skillet over medium-low heat.

2. When the skillet is hot, put the sweet potatoes, mushrooms, bell pepper, onion, broth, garlic powder, cumin, chili powder, and pepper in it and stir.

3. Cover and cook for 10 minutes, or until the sweet potatoes are easily pierced with a fork.

4. Uncover, then give mixture a thoroughly stir.

5. Cook without covering for an additional 5 minutes, stirring once after about 2½ minutes, and serve.
