Medium-grain rice:
Measure the rice by using a cup and level the top.
Rinse the rice in a strainer with cold water to get rid of grit, dust, and starch.
Add the rice into a pot and add two cups of water for every cup of (brown) rice.
Optional: add a little olive oil. This will improve the taste of brown rice.
Put the pot over medium heat, bring the water to a boil, lower the heat to medium-low, cover the pot and allow the rice to cook for about 45 minutes.
Check the rice. The majority of water should be absorbed, a little water left in the pot is fine. Drain excess water if necessary.
After cooking, allow the rice to rest with the lid on the pot for about 10 minutes.
Fluff the rice with a fork and set it aside for consumption or the recipe it will be incorporated in.
