Lemony Pickled Mushrooms

Preparation time: 15 minutes

Fermentation time: 3 days

Servings: 4 quarts

Ingredients:

24 oz. sliced fresh mushrooms

4 sprigs of fresh thyme

½ thinly sliced serrano pepper

For the Brine:

8 oz. white wine

4 oz. water

1 ¼ oz. kosher salt

½ oz. white sugar

4 thinly sliced cloves of garlic

20 whole black peppercorns

12 coriander seeds

3 x 1” strips lemon zest

Directions:

1. Fill sterilized jars with mushrooms leaving ¼ of the jars empty at the top. Top with a sprig of thyme and pepper slices.

2. Combine the rest of the ingredients in a small pan on medium-low heat. Simmer for 5 minutes until sugar dissolves. Stir occasionally. Remove the pan from heat and pour the mixture into each jar evenly.

3. Seal and process jars. Store in the refrigerator for two days before consuming.
