Easy I.P. Cajun Prawns

Stock up on Omega-3’s! Makes 4 medium skewers.

Ingredients:

• 20 large shrimp

• No-salt Cajun seasoning for sprinkling

• coconut oil

• 1 cup chicken stock or water

• ¾ cup paleo penne

Directions:

Sprinkle all sides of prawns with Cajun seasoning.

Pour ½ tsp Cajun seasoning, penne, chicken stock in pot.

cook on high pressure 4 minutes.

NPR 2 minutes.

QPR.

Stuffed Peppers with Avocado and Eggs

Great use for garden fresh peppers! Makes 2 servings.

Ingredients:

• 4-6 eggs

• 1/3 cup diced mushrooms

• 1/3 cup diced avocado

• 1 teaspoon oregano, diced

• 1 teaspoon rosemary, diced

• ¾ cup water or chicken stock

• 2 red bell peppers

Directions:

Clean peppers; remove tops, ribs, and seeds from bell peppers.

In a large bowl, mix together eggs, diced mushrooms, diced avocado, diced scallions, diced oregano, diced rosemary.

Pour chicken stock into pot.

Insert trivet.

Place peppers on trivet

Fill peppers 2/3 full of egg mix.

Cook on high pressure 10-12 minutes.
