SERVES 4
3 tablespoons olive oil, divided
1 onion, cut in thin slices
1 tablespoon whiskey
1 pound beef sirloin, sliced very thin
4 slices Provolone cheese
4 hoagie rolls
In a skillet, add 1 tablespoon olive oil over medium heat. Place onions in pan and cook until translucent, 2–3 minutes. Remove onions and set aside.
Turn down heat so oil does not splatter and add remaining 2 tablespoons of olive oil and whiskey to skillet. Sauté the slices of meat quickly on both sides.
Put cheese and onions on top of meat just before meat has finished cooking and cover skillet until cheese melts.
Place equal amounts of meat-cheese-and-onion mixture in each roll. Serve.
