The Mai Tai is the quintessential tiki cocktail, as far as I’m concerned. It is one of the most classic and actually one of the most fought over. The founding fathers of tiki, Don the Beachcomber and Trader Vic, actually went to court over the rights to the drink, each claiming that he was the original creator. Vic won that battle and it is credited to him at Trader Vic’s in Oakland, California, circa 1944. He claims that it got its name from a friend who was visiting from Tahiti. When she tried it for the first time, she declared “Maita’i roa,” literally meaning “the very best!” or figuratively “out of this world!” The Mai Tai is a fairly tart and citrusy drink that is super-refreshing. Lime and rum dominate the flavor profile, while the curaçao and orgeat primarily add body and soften the drink.
