Iodine Test

Who would have thought that Mrs. Breckinridge’s seventh grade science class would be so useful? In that class, along with dissecting frogs, I also learned something eminently useful for making my own beer: the starch reaction.

To perform the iodine test, put a small one teaspoon sample of mash wort on a clean, white saucer and a drop of tincture of iodine on a separate part of the plate. Gently tip the saucer so that the mash makes contact with the iodine and observe the color. If it is black, blue, or deep purple, there are still unconverted long-chain starches. If it is red, brown, or reddish brown, all the long-chain starches have broken down into sugars and short chain starches. If the mash is completely converted to sugars, the iodine remains yellow. As long as the test shows that all long-chain starches have been broken down, it is fine to proceed to sparging.
