1 large chopped onion
1 16-ounce can kidney beans
1 16-ounce can tomato sauce
1 teaspoon chili powder
1⁄2 teaspoon salt
1⁄2 teaspoon pepper
5 cups water, divided
1 cup plain cornmeal
Shredded Cheddar cheese
1. Preheat oven to 350°F. In a saucepan over medium-high heat, add ground beef and onion and cook until meat is browned.
2. Add beans, tomato sauce, chili powder, salt, and pepper; cook until beans are heated through, approximately 5 minutes.
3. In a stockpot, bring 3 cups water to boil. In a medium bowl, mix 1 cup cornmeal and 2 cups cold water. Gently pour this into the boiling water. Stir constantly. Cook for 3–4 minutes or until thick and bubbly.
4. Pour half of cornmeal mixture into greased 2-quart casserole dish. Add meat mixture on top of cornmeal mixture. Pour remaining cornmeal mixture on top of meat mixture. Top with shredded cheese. Bake for 30 minutes.
