Calissons d’Aix

A specialty of Aix-en-Provence, these diamond-shaped wafers are topped with a mixture of crushed almonds and candied orange or melon, then crowned with white icing. They taste like fruity marzipan with the crunch of a cookie. Supposedly, they were created for the second wedding of King René in 1454 when the elderly widower wanted to win the heart of his young bride.
