Grilled Skirt Steaks with Carlo’s Chimichurri
Serves 4
Essentially Argentinean pesto, chimichurri is an easy sauce made of chopped fresh herbs, oil, and garlic. Some folks like marinating meat in chimichurri, but we prefer to just spoon it on top so it doesn’t lose any of its fresh, bright flavor. Try it on grilled chicken or fish, too. Serve with Cilantro-Lime Coleslaw and fresh avocado for a simple, beautiful meal.
2 tablespoons neutral oil (such as canola or vegetable), plus more as needed
¼ cup dry white wine
1 teaspoon red pepper flakes or hot sauce
½ teaspoon kosher salt
½ teaspoon freshly ground black pepper
½ cup finely chopped fresh parsley
¼ cup finely chopped fresh cilantro
4 scallions, thinly sliced
1 garlic clove, minced
½ teaspoon dried oregano
2 pounds skirt steak
2 tablespoons JWB Steak Seasoning, or 2 teaspoons kosher salt plus 1 teaspoon freshly ground black pepper
