During the grain filling phase, kernels form, elongate, and then fill with the starchy endosperm and embryo material. Early in development, the endosperm resembles a milky fluid; as it matures, it becomes more like dough. When it reaches maturation, the grain dries up and shrinks, and the kernel becomes dense and hard. The overall form of the grain ear is dependent on kernel density. In varieties with ample spacing, the ear takes on a curved or “lax” form; tighter spacing produces straighter ears.
