The list below provides a day-by-day summary of all that I have described to this point.

Day 1

Start your years culture.

Day 3

Crush and de-stem the fruit. Add Campden tablets. Weigh, test for acidity, adjust for sugar and acid balance. Press (white and most fruit wines), add yeast to the must in pre-mixed starter.

Day 4 or 5

Break up the cap and stir. Do this daily thereafter until wine reaches a specific gravity of 1.030.

Day 10

(Or when the wine reaches a specific gravity of 1.030.) Press out the grapes in red wines. Rack all wines into carboys and stopper with air locks and sulfite.
