Coffeegeek.com, a very reliable source for all things coffee, advocates using a cloth filter for pourover coffee.32 Their method seems to be much more forgiving in terms of technique, but it’s a more expensive setup. It all depends on you. I have not personally had the pleasure of trying the cloth filter for pourover, but if I happened across one I would certainly try it.
With all that out of the way, we’ll move on to the basic instructions:
Most pros won’t put the dripper directly over the coffee cup. They’ll use a small pitcher as a receptacle. This is really your call. Whatever you’re putting the dripper on top of, do it now.
Put the filter in place and fill with coffee grounds. I recommend starting with about 17 grams of coffee grounds and experimenting from there.
Pour the hot water through the coffee grounds. This is where all of the skill and technique comes in, but don’t even worry about that the first couple times you do it. Just get the water through the grounds and into the cup. As time goes by, start experimenting. First, you just want to moisten the coffee grounds. Think of this as priming them for the extraction. Then, as you pour, make sure you evenly distribute the pour. Professional baristas will do this in a spiral motion around the coffee grounds. It would surely be helpful to watch a few YouTube videos for tips as well.
At the end, after removing the dripper, some people think that adding a little splash of hot water opens up the flavor. I don’t agree, but try it both ways and see what suits you.
