Methods:

1. In a large skillet set over medium heat, add in the beef. Cook for 8 to 10 minutes or until browned. Remove from heat.

2. Prepare the lasagna noodles according to the directions on the package.

3. Grease a large baking dish with cooking spray.

4. Add 4 to 5 tablespoons of the marinara sauce into the bottom of the baking dish.

5. In a large bowl, add in the cooked ground beef, spinach, cottage cheese, beaten eggs and sliced mushrooms. Stir well to mix. Pour half of this mixture over the marinara sauce. Add ½ of the noodles over the meat mixture.

6. Repeat these layers one more time.

7. Sprinkle the shredded mozzarella cheese over the top.

8. Place into the oven to bake for 35 to 40 minutes at 350 degrees.

9. Remove and cool for 5 minutes before serving.
