TONKA BEAN BRANDY

Tonka beans come from a South American flowering tree and have a taste that is similar to vanilla, but with fruity and spicy, as opposed to floral, elements to its flavour. This infusion of brandy is delicious served with an accompaniment of dates to nibble, which really bring out its subtle flavours.

700 ml (23½ fl oz)

10 minutes, plus 3 days to infuse

Ingredients

4 tonka beans

1 tablespoon Simple Syrup

700 ml (23½ fl oz) brandy

Put the tonka beans and simple syrup in a sterilised 1 litre (34 fl oz) glass jar or bottle and pour over the brandy. Seal the jar tightly and store in a cool, dark place for 3 days, gently shaking the jar occasionally to help infuse the flavours.

After 3 days, strain the brandy through a fine-mesh sieve into a large jug, and discard the beans. Strain again through a fine-mesh sieve lined with a muslin (cheesecloth) or a coffee filter. Transfer to one large or several smaller sterilised glass bottles and seal tightly.

COCKTAIL TIPS

For a riff on an Espresso Martini, mix a single measure (25 ml/¾ fl oz) infused brandy with 25 ml (¾ fl oz) Tia Maria, 25 ml (¾ fl oz) espresso and 1 teaspoon vanilla extract. Pour into a martini glass and garnish with coffee beans.

Add a single measure of infused brandy and 1 teaspoon honey to a cocktail shaker with ice. Shake briefly, then strain into a chilled cocktail glass and serve with dates on the side.
