1. What is called a caffè latte in America is essentially a monster-size cappuccino in Italy.
2. Steam the milk first and set it aside. Pour the freshly brewed, hot espresso directly into the cup.
3. Pour the preferred proportion of steamed milk over the espresso.
4. Add sugar or a biscotti, if desired.
Caffè Macchiato
1. Steam a small amount of milk.
2. Dot the center of a cup of espresso with just 1 or 2 tablespoons (15 to 30 ml) of the steamed milk, leaving a brown ring of espresso around the edges of the cup.
How to Steam and Froth Milk Without a Machine
There is no need for expensive espresso machines to make frothed milk. A simple whisk can be used to aerate the milk, with a simple stove burner as the heat source. Cold milk, preferably 2% or homogenized. (For quick measurements, fill one of the serving cups halfway with milk and multiply that amount by the number of people being served.)
A small to medium-size saucepan.
A flexible, loose-wired whisk.
