SUMMARY

Clean brewing equipment makes clean beer, and clean beer always tastes better. Home brewing requires diligent sanitizing, which is not just cleaning. Purportedly, the number one cause for poor tasting beer is poor sanitation.

Brewing equipment must be cleaned before sanitizing to eliminate residue that harbors germs and bacteria.

Proper cleaning is imperative to good sanitation.

• Cleaning is generally defined as a visible process of removing residue and dirt.

• Sanitizing is the procedure of killing nearly all microorganisms that could be on your making equipment.

• Sterilization is when all living cells are killed, such as by heat when boiling. Boiling the wort sanitizes the wort. Although when the wort cools sanitation precautions must be taken to make certain your brew stays safe until it is drank.

Some home brewers use either bleach or vinegar to sanitize their equipment. When bleach is used all equipment must be thoroughly rinsed before use. Bleach can ruin your clothes, floor, carpet and brew. Rinsing bleach with tap water is not recommended. A no rinse sanitizer is superior to bleach.

NOTE: DO NOT mix bleach and vinegar as they create a toxic gas that can be fatal.

The best choices for sanitizing include Star San, One Step, and Iodorphor.
