FLAVOURED WATER KEFIRS

Water kefir is more versatile than milk kefir, as it lends itself to a wider variety of flavours. Try adding the following ingredients to a 250ml (9fl oz) bottle of water kefir and leave it to ferment in the refrigerator for another 24 hours – it will get slightly fizzy, so open with care!

• A sprig of rosemary (my favourite way to flavour water kefir)

• 2 slices of fresh root ginger

• A sliver of unwaxed lemon rind

VARIATION 1: ORANGE KEFIR WATER

Simply mix 100ml (3½fl oz) freshly squeezed orange juice with an equal amount of water kefir and a dash of orange flower water, and serve.
