Bring 2 quarts water and 1 tablespoon salt to a boil in a large pot over medium-high heat. Using the back-of-the-box cooking times as a guide, cook the pasta, partially covered and stirring frequently, until the pasta is al dente.

Meanwhile, if using garlic, heat the Fat and garlic in a large skillet over medium-high heat until the garlic just starts to sizzle. If using onion, heat the Fat over medium-high heat. Add the onion and sauté until it has softened, 3 to 4 minutes. Add the Tender Vegetables to the pan, sprinkle generously with salt and pepper, and sauté until tender, 5 to 7 minutes longer. Stir in the Flavorings (except fresh ones) and cook to blend the flavors, about 1 minute longer. Remove the vegetables from the heat and set aside, uncovered, until the pasta is done.
