Herbs are best harvested in the late morning, after the dew has evaporated. Use scissors to get a clean cut.

For aromatic, leafy herbs such as mint, the best time to harvest is just before the plant flowers, as this is when the greatest abundance of natural oils is concentrated in the leaves. This is especially important when the herbs are to be dried and stored, as the oils provide the best flavor, therapeutic value, and color.

Using Fresh Herbs

Okay, you have the herbs in your basket and have tidied up your plants. Now what? If you want to make tea from fresh herbs, first wash them thoroughly in clean cold water, then shake or pat them dry with a towel. Herbs that grow close to the ground, like parsley and thyme, need to be washed carefully because they are the most likely to have soil on their leaves. Remove stems and any dead and imperfect leaves, chop or bruise the herbs, and pop the green goodies into a teapot with some boiling water. It’s that simple!
