Zucchini Chili

Vegetarian chilis have become all the rage during the past decade. Serve this with a tossed green salad.

Makes 4 to 6 servings

3 small zucchini (about 1 pound)

2 tablespoons olive oil

1 large onion, diced

1/2 green or red bell pepper, seeds and ribs removed, and chopped

1 jalapeƱo or serrano chile, seeds and ribs removed, finely chopped

3 garlic cloves, minced

3 tablespoons chili powder

2 tablespoons smoked Spanish paprika

1 tablespoon ground cumin

2 teaspoons dried oregano

1 cup Vegetable Stock or vegetable broth

1 (15-ounce) can red kidney beans, drained and rinsed

1 (28-ounce) can crushed tomatoes in tomato puree

Salt and freshly ground black pepper to taste
