2 cups blueberries

2 cups blackberries

2 cups strawberries

2 cups shredded jicama or green apple

For the dressing:

ΒΌ cup young Thai coconut flesh

2 tablespoons water

2 tablespoons lemon juice

1 teaspoon vanilla bean paste or dried vanilla bean

1 teaspoon hemp protein powder (optional)

1 teaspoon sea salt

1 teaspoon poppy seeds

1. Wash the berries well. Combine with the jicama in a medium-size mixing bowl and set aside.

2. To make the dressing, in a blender combine the coconut flesh, water, lemon juice, vanilla bean paste, hemp protein powder, and sea salt. Blend until well emulsified.

3. Fold in the poppy seeds.

4. Toss the berries in the dressing and serve.

Note: This salad can be stored in the refrigerator for up to 5 days.
