HONEY SIMPLE SYRUP

1 cup water

1 cup honey

Combine the water and the honey in a pan over medium heat. Stir continually until the honey and water are evenly combined.

The Eighteenth Amendment helped start Prohibition, but it was repealed by the Twenty-first Amendment in 1933. At Japp’s we throw a repeal day party every December to commemorate the return of legal liquor.

At Japp’s, we use a juicer to make our own fresh fennel juice. Cut a fresh fennel bulb to fit the opening of your juicer and juice. It will keep for four days in the refrigerator.

11⁄2 ounces gin

1⁄2 ounce fennel juice

1⁄2 ounce vanilla simple syrup (see chapter 2 for recipe)

1⁄4 ounce lemon juice, freshly squeezed

5 bing cherries

Add the cherries to a mixing glass. Muddle and add the rest of the ingredients. Add ice and shake. Double strain into a cocktail glass. Garnish with a cherry.
