Lentil Salad

WITH HALLOUMI AND CARROT BURGERS

Very tasty vegetarian burgers perfectly accompanied by a flavorful lentil salad.

731 CALORIES/SERVES 2

Lentil salad

3½ ounces (100 g) dried Puy lentils (small French lentils)

3½ ounces (100 g) fresh cherry tomatoes

½ bunch of fresh basil + some for garnish

½ red onion

1¾ ounce (50 g) sun-dried tomatoes in oil (preferably cherry tomatoes)

½ tablespoon olive oil

Salt

Black pepper

10 black or green olives

Halloumi and Carrot Burgers

4½ ounces (125 g) coarsely grated carrots

3½ ounces(100 g) coarsely grated halloumi

1 egg

1 pinch chili flakes

Salt flakes

1¾ fluid ounces (½ dl) sesame seed + more for breading

½ tablespoon olive oil

1. Cook the lentils in lightly salted water for about 30 minutes. Drain the water and place the lentils in a bowl.

2. Cut the fresh tomatoes into quarters. Chop the basil and red onion, and mix everything in the bowl along with sun-dried tomatoes, oil, salt, and pepper. Top with olives.

3. Mix all the ingredients for the burgers in a bowl. Shape the burgers and bread them with sesame seeds. Heat some oil in a skillet and fry the burgers for a few minutes on each side.

4. Serve the burgers with the lentil salad and garnish with basil.
