Rather than weighing rice it’s better to measure the volume – just remember 1 part rice to 2 parts water.

SERVES 4

How to Cook Brown Rice

Brown rice is a whole grain, so it includes all the bran and germ (see recipe). It’s chewy and has much more flavor than white rice.

2 cups brown rice

4 cups water

½ tsp salt

Rinse the rice in a sieve under the tap.

Boil the water and salt in a pan with a tight-fitting lid.

Add the rice to the pan and put the lid on. Once you can hear the water bubbling and boiling turn the heat down really low and cook for 25 minutes.

Now you can lift the lid and check whether the rice is cooked. It may need about 5–10 more minutes with the lid on. There should be some water left in the bottom of the pan (if not add 2 tablespoons).

Continue to cook over low heat until the rice is ready. It should be slightly chewy but soft in the middle. Turn off the heat and leave the rice to rest with the lid on for at least 5 minutes before serving. The rice should be soft and fluffy but not sticky.
