1 Make the curry paste. In a small bowl, soak the dried chillies in water for 20 minutes, then drain. In a mortar and pestle (or using a hand blender) pound the curry paste ingredients, except for the shrimp paste, until you have a coarse paste. Add the shrimp paste and pound for another 5 minutes. Set aside.
2 Fill a large pan with water and add the pork bones. Bring to the boil and simmer for 30 minutes.
3 Meanwhile, in a wok or frying pan heat the oil over a low heat, once hot stir-fry the curry paste for 5 minutes until fragrant. Add the fermented soybean and the minced pork (including the extra quantity, if using), and stir-fry until cooked.
