Lox, Eggs,

and Onions

Another way to enjoy smoked salmon with a bagel, a classic New York brunch favorite. The name is traditional, but these days, it is almost always made with smoked salmon, not the much-saltier lox.

Ingredients

-1–2 tbsp. unsalted butter

-1 large onion, finely chopped

-3–4 oz. smoked salmon, cut into bite sized pieces

-8 eggs, well beaten

-salt and pepper to taste

-bagels

-butter or cream cheese for bagels as desired

Directions

•In a medium nonstick pan, melt butter over medium heat. Add onions, stirring frequently, until soft and translucent. Add salt and pepper to taste. Reduce the heat to low, add smoked salmon and stir for about three minutes. Add beaten eggs, stirring continuously for two-and-a-half to three minutes until desired consistency is reached. Pair with lightly toasted bagels with a shmear of cream cheese or a pat of butter.
