2 Put the toasted peanuts, cloves and garlic into a blender or food processor. Tip in the chillies and their soaking water and add the onion, tomatoes, cinnamon, cumin, oregano, brown sugar, three tablespoons of the oil and a really good pinch of salt. Blend for 2 minutes so that the sauce becomes beautifully smooth. Pour the sauce into a saucepan and bring to the boil over a medium heat. Cover, reduce the heat to low and simmer for 20 minutes.

3 Meanwhile, make the salad. Shave the fennel using a slicer or mandolin and add to a large mixing bowl with the radish. Pour in the lime juice and oil, and season with salt and pepper. Mix everything together really well, then cover and set aside.
