Above are White Top workers riddling sparkling wine by hand in a cellar lit only by small gas lanterns and candles. After riddling, the lees are carefully disgorged from the bottles, a varying amount of sugar (the dosage) is added, and the bottles are corked. A wire bail is placed over the cork to prevent it from popping under pressure. As seen in the photograph below of the Taylor champagne bottling line in 1938, not much of this process had changed since the 1880s (see page 17). Below, from right to left, Faye Sherman disgorges the bottles, George Silliman adds the dosage, Francis Smalt uses a floor corker, Frank Hamilton attaches the wire bail, and Frank Rice inspects bottles for clarity.
