Weeds get a bit of a hard time. Just because of an outdated classification system, some plants are condemned as weeds forever. Others, often more ugly, are deemed ‘flowers’ and are given all the care and attention.

Rachel and I are fairly rubbish gardeners. Actually, scrap that, we are awful. Most of the time we can’t tell the difference between weeds and plants so we just leave the ones that look the nicest.

Weed Appreciation Day is when weeds finally get their moment. Dandelions are one of the most notorious weeds. They have a habit of appearing everywhere. All over the lawn, in flowerbeds, between patio cracks. We even have one that appears each year from a crack in our windowsill. Despite their beautiful yellow flowers and hypnotic dandelion clock they are still considered pests and people go out of their way to dig them up or spray them with pesticide.

Every part of a dandelion is edible, however, and they have lots of health-giving benefits, as well as medicinal and culinary uses. They are rich in potassium, antioxidants, and vitamins A and C. You can make wine, salads, jellies, fritters. The list is endless. I didn’t know any of this before today, by the way, but I sure do now.

I dashed out into the garden with hearty enthusiasm and planned to make a delicious dandelion salad for dinner. My excitement was soon diminished when I discovered that there were no dandelions. It was the end of March, but there was still a slight covering of snow on the ground and it had been unseasonably cold for weeks. I scoured around the patches of grass and found a few old leaves and a couple of new shoots which I thought could potentially be dandelions, and decided they would have to do.

We shared a three-leaf dandelion salad for dinner, served with chicken kebabs as it was On-a-stick Day.
