BEEF & PEARL BARLEY CASSEROLE

SERVES 4 / PREP TIME: 5 MINUTES / COOK TIME:1-2 HOURS

Absolutely delicious

2 CUPS PEARL BARLEY

12OZ LEAN CASSEROLE BEEF, CUBED

1 CUP CHICKEN/BEEF/VEG STOCK

1 CARROT, PEELED & CHOPPED

1 CELERY STALK, CHOPPED

1 BAY LEAF

1 TBSP PAPRIKA

1 TSP PEPPER

1 TSP THYME

1 CUP WHITE CABBAGE, SHREDDED

1 TBSP OLIVE OIL

1. Heat the oil in a large pot over a medium to high heat and add the beef.

2. Brown each side, cooking for 6-7 minutes.

3. Now add the stock and 1 cup water along with all the rest of the ingredients.

4. Turn the heat down to a medium heat and allow to cook slowly for 1-2 hours.

(Alternatively you can transfer the beef and the rest of the ingredients to a slow cooker and leave to cook overnight.)

5. Serve hot and enjoy!
