As we got older, and after Dad passed away, friends would get invited to join the Murray family for a sit-down dinner. And even after we were all grown up, whenever one of us (or our friends) needed a “Lucille fix,” they would come back to Wilmette and be welcomed with good food and great hospitality. I’ll never forget the time Brian invited John Belushi over for fried chicken when they were at the Second City together. (More on that soon . . .)

One thing the pandemic has done for many is to “bring back the family meal” at the table, not in front of the television. While I still feel nostalgic remembering my dad slowly carving the meat, I sometimes wonder what he would think of how my palate has changed over the years. The many stages I’ve passed through in my cooking history have definitely expanded my horizons. There are a lot of ways to use meat in the main course. Here are some of my favorites.
