Fuyung Tofu

• 2 big pieces tofu, mashed

• 4 eggs, beaten well

• 150 grams shrimp, peeled and roughly chopped

• 2 cloves garlic, crushed

• 3 leeks, thinly sliced

• ½ teaspoon salt

• ½ teaspoon ground pepper

• ¼ teaspoon sugar

• 1 tablespoon all-purpose flour

SAUCE:

• 5 tablespoons ready-made tomato sauce

• 2 cloves garlic, finely chopped

• 1 tablespoon ginger, julienned

• 2 tablespoons peas, frozen/canned

• 1 carrot, cut lengthwise

• 50 grams onion, sliced

• ½ teaspoon ground pepper

• 1 celery, minced

• 1 teaspoon chicken broth powder

• Salt, sugar, vinegar to taste
