Garlicky White Bean Burgers
SERVES 4 | PREP TIME: 10 MINUTES | COOK TIME: 15 MINUTES
Crunchy on the outside, soft on the inside—these burgers are a treat. But don’t expect a meat look-alike. Instead, appreciate this burger for what it is: a delightful bean burger with lots of flavor. And the toppings make this extra tasty.
1 (15.5-ounce) can cannellini beans, drained and rinsed
⅓ cup Italian bread crumbs
3 garlic cloves, crushed and chopped
1 scallion, chopped
1 large egg
1 teaspoon salt
½ teaspoon freshly ground black pepper
2 tablespoons olive oil
4 hamburger buns
1 avocado, peeled, halved, pitted, and sliced
4 slices red onion
1 tomato, sliced
Lettuce leaves, for serving
1 . In a food processor or blender, combine the beans, bread crumbs, garlic, scallion, egg, salt, and pepper. Process until smooth.
2 . In a skillet over medium heat, heat the olive oil. Drop the bean mixture in by the spoonful, creating 4 rounds. Using the spoon, press the rounds into patty shapes. Cook for 6 to 8 minutes per side until golden, flipping once. Remove from the skillet.
3 . Arrange the hamburger buns on each of 4 plates. Top each bun with a white bean patty, avocado slices, red onion, tomato, and lettuce.
BUDGET TRICK: When planning meals for the week, remember that hamburger buns come in packages of eight. For a low-waste plan for four people, plan two dinners using them.
