Sugar-shine

• 6 gallons (23 L) unchlorinated or filtered water

• 14 pounds (6.4 kg) granulated white sugar

• 1 package Turbo yeast (enough for at least 6 gallons wash)

In a large stock pot or mashing pot (at least 4-gallon capacity), bring 2 gallons of water to a boil. Turn off heat, add the sugar and stir to dissolve. Put 3 gallons of cold water in a fermenting bucket (8 gallons or larger), then pour in the hot water and sugar mixture. Stir to combine. Check temperature; you are aiming for about 38°C/100°F. Add more warm or cold water until there is a total of 6.6 gallons liquid (25 liters). Check temperature again. If it is over 38°C/100°F, just put the fermenter lid on loosely and let it cool down a bit. Check the specific gravity and record this number.
