This is a Caribbeanized take on the world’s most beloved champagne cocktail, The French 75. Here, some of the West Indies’ most ubiquitous ingredients are inverted to create a cocktail that stealthily tempers the potency of the strong spirit, while simultaneously embracing the crisp, forgiving rush of champagne.

Serves 4

1 cup brown sugar

4 ounces dark rum

Juice of 2 limes

4 ounces passion fruit juice

Dash of Angostura bitters

1 bottle champagne, chilled

Bring 1 cup of water and 1 cup brown sugar to a boil. Allow to cool completely.

In a cocktail shaker filled ¼ of the way with ice, combine the rum, lime juice, passion fruit juice, ¼ cup brown sugar simple syrup, and bitters. Shake until chilled.

Strain just shy of ¾ of the way into four champagne flutes, then top with champagne.

Make another batch.
