PEAR BRANDY, OR POIRE WILLIAMS

In cocktails, pear brandy can act almost like a concentrated flavor extract, and as such, it can reinforce another flavor or combine with other ingredients to create an entirely new flavor—or sometimes both. For example, if pear brandy is used in a tiny proportion in a drink with a base that includes apple brandy, it will lift and amplify the apple presence. The resulting flavor is not necessarily pear plus apple, but more like Technicolor apple. Thanks to pear brandy’s versatility, it’s also a good match with herbal flavors, as in our Jet Set cocktail (this page), where the freshness of pear brandy is given greater dimension by the cocktail’s accents of mint liqueur and absinthe, with its herbaceous punch. The result is a refreshing cocktail with deep layers of complexity.
