To make this non-chocolate flavored, leave out the cocoa powder and add cinnamon/nutmeg/spices. Swap out the chocolate chips for dried fruits/mixed nuts, etc.

For a softer cookie, reduce the cooking time—this recipe doesn’t contain eggs so it will be fine to enjoy under-baked.

This recipe works well with sugar-free syrup, as it isn’t used as the sole binder.

LOW-CARB TRIPLE CHOCOLATE MUG CAKE

Just because a recipe is deemed “low carb” does not mean it is “low flavor”—quite the opposite! As someone who loves working out, I try to refuel straight after. These mug cakes are great alternatives to protein shakes and they taste even better. The best bit? These can be batch-made and chucked in your gym bag to nosh on after those stretches!

Microwave 5 minutes, Oven 10 to 12 minutes

NUTRITIONAL INFORMATION

Calories 191, Protein 32 grams, Fat 3 grams, Fiber 4 grams

INGREDIENTS

1 scoop protein powder (32 to 34 grams)

½ teaspoon baking powder

1 tablespoon coconut flour

1 tablespoon granulated sweetener of choice

1 large egg or ¼ cup liquid egg whites

¼ teaspoon vanilla extract

¼ cup (or more) milk of choice (dairy-free, if necessary)

1 tablespoon mixed chocolate chips (milk, dark, and white)

MICROWAVE OPTION:

Add the dry ingredients to a greased, microwave-safe bowl. Mix until well combined.

Add the egg, vanilla extract, and your milk of choice and mix well, until a thick batter is formed. If the batter is too thick, add a little more milk. Top with chocolate chips and microwave for at least 60 seconds, and then in 10-second spurts until the cake is light and fluffy in the center.

OVEN OPTIONS:

Preheat the oven to 350 degrees Fahrenheit.

Follow the microwave directions but transfer the batter to a greased oven-safe dish or ramekin. Bake for 10 to 12 minutes, or until a toothpick comes out clean from the center.
