Grilled Chicken with Herby Fresh Pasta
Make the salad while the chicken is cooking.
SERVES 4
4 chicken portions
2 garlic cloves, cut into thin slivers
30 ml/2 tbsp olive oil
Salt and freshly ground black pepper
225 g/8 oz fresh pasta
50 g/2 oz/¼ cup unsalted (sweet) butter
50 g/2 oz/½ cup Parmesan cheese, freshly grated
30 ml/2 tbsp chopped fresh basil
30 ml/2 tbsp chopped fresh parsley
Wedges of lemon, to garnish
A Green Salad, to serve
1 Preheat the grill (broiler).
2 Gently lift the skin on the chicken and push a few slivers of garlic underneath on each portion.
3 Place on foil on the grill rack and brush all over with oil. Season with salt and pepper. Grill (broil) for 20 minutes, turning occasionally, until cooked through and the skin is crispy, brushing with a little more oil during cooking.
4 Meanwhile, cook the pasta according to the packet directions but remember, it will take only about 4 minutes until just tender. Drain in a colander and return to the pan.
5 Add the butter, cut into small pieces, lots of freshly ground black pepper, the cheese and herbs, and lift and stir with two forks over a gentle heat until the butter is melted and the pasta is coated in the fragrant herbs.
6 Pile on to warm plates, and top with the chicken. Garnish with wedges of lemon and serve with the salad.
