Kai-Saru Caesar

Kai-Saru is the traditional Japanese pronunciation of the word Caesar (or, in Japanese, ), and this recipe is a special tribute to the wonderful flavours Japanese cuisine has given to the world. Sake is the base, layered with the delicate acidity of rice vinegar, pickled ginger juice, and soy sauce, and capped off with some heat from the wasabi. Finally, while not mandatory, garnishing this baby with a battered clam sushi roll makes it a cross-cultural work of art.

Glass

Rim Fresh cracked salt and black pepper

What 1½ oz (45 mL) sake

¼ oz (7.5 mL) rice vinegar

¼ oz (7.5 mL) pickled ginger juice

½ oz (15 mL) soy sauce

½ barspoon wasabi paste

3 grinds fresh cracked black pepper

3 oz (90 mL) Mott’s Clamato Cocktail

Garnish Your favourite kind of sushi roll

How 1. Rim a rocks glass with citrus and rimmer.

2. Fill the glass to the top with ice.

3. Add the ingredients in the order listed.

4. Stir well to mix the cocktail, and garnish.
