In 2007 Bowling Green Municipal Utilities was celebrating sixty-five years of service to the residents of its city. BGMU has a long-standing tradition of publishing a cookbook to give to its customers. The 2007 version, BGMU Cookbook 2007, included a recipe for spicy cornbread that serves as the inspiration for the following.8

Chili-Cheese Cornbread

4–6 servings

1 cup yellow cornmeal

1 cup flour

¼ teaspoon salt

1 tablespoon sugar

2 large eggs

1 cup milk

2 tablespoons oil

¾ cup cheddar cheese, grated

1 4-ounce can green chilies, drained and chopped

nonstick cooking spray

Preheat oven to 375 degrees F.

Combine cornmeal, salt, flour, and sugar in a medium-sized bowl; make a well in the center of the mixture. Combine milk, eggs, and oil in a separate bowl, then add this mixture to the dry ingredients, stirring just until moistened. Stir in the green chilies and cheese.

Pour the batter into an 8-inch square baking dish coated with nonstick cooking spray. Bake for 30 minutes or until golden brown.
