John Freeman decided to move his Piggy’s Barbeque to a larger, more prominent location in Bricktown after seeing the steady flow of customers at Spaghetti Warehouse. Freeman combined two buildings at 303 and 309 East Sheridan Avenue, spent $1 million on renovations, and created a tribute to Dixieland jazz in a building designed to resemble a turn-of-the-20th-century tavern. (Both, courtesy of the Oklahoma Historical Society.)

The new Piggy’s opened with Dixieland jazz played nightly in a restaurant decor consisting of old railroad timbers, old stained glass, boxcar siding, wood paneling, and bars from the city’s original 1890 territorial jail. The restaurant expanded its hours and remained popular until the building was sold to Pearl’s Crabtown. (Both, courtesy of the Oklahoma Historical Society.)
